Sausage Onion Carrot Apple Traybake

Ingredients
- 1kg new potatoes, halved
- 2 red onion, quartered
- 2 400g pack sausage
- 1 carrot, batons
- 1 apple, cored and sliced
- Sauce
- 1 red onion, sliced
- 25g butter
- 1 chicken stock pot
Method
Put potatoes, onion, salt and pepper on a tray and cook in oven on 180°C for 50 min. After 20 min add the sausage, apple and carrot.
Sauce. On a low heat caramelize the onion in butter. This usually takes 30-40min. Add stock pot and a little water and whisk into a sauce.
