Sausage and Chickpea Tray Bake

Method

Heat the oven to 180°C fan. Put the sausages, tomatoes, chickpeas, carrots in a tray. Mix in olive oil, cumin seeds, chilli flakes, salt, pepper, paprika and toss to coat.

Roast for 45 minutes, until the sausages start to brown. Rotate the pan once halfway through the cooking, and add the spinach. Add a splash of water if you think it needs it.

Sprinkle the pumpkin seeds on top, add the lemon juice and zest, and the dill, and serve.
