Reb's Portuguese Sausage Casserole

Amount need refinement...this makes a lot
Ingredients
- 3 tbsp
- olive oil
- 3
- onions
- 400g
- chorizo, diced
- 3
- potatoes, peeled and chopped to 3cm cube
- 6 tin
- beans (chick pea, kidney, borlotti, white)
- 1
- green pepper, chopped
- 2 tin
- tomatoes, chopped
- 2 cloves
- garlic
- 1/2 tsp
- dried basil
- 1/2 tsp
- dried thyme
- 2
- bay leaves
- 1
- chicken stock pot
- 60g
- panko breadcrumbs
Method
Sauté onion until golden.
Add chorizo cook another 10 min.
Add garlic, thyme, basil, bay and cook for another minute.
Add tomatoes.
Drains and rinse beans. Add beans, potatoes, stock.
Cook low heat 20 min.
Add green pepper another 15 min.
Top with breadcrumbs.
Cook in oven until brown, 1 hour, 180C fan.
Serve with tabasco.
