Radish and Bean Salad

Ingredients
- 1 400g tin cannelini beans, drained
- 6 radishes, sliced
- 6 spring onions, chopped
- 1 handful flat leaved parsley, chopped
- 2 anchovy fillets, mashed
- 3 tbsp olive oil
- 1 tbsp white wine vinegar
- salt and pepper
Method
Mix together the beans, radishes, spring onions, parsley.
Whisk together the oil, vinegar and anchovy to make a dressing.
Mix with the salad, and taste for salt.
