Potato Salad

Ingredients
- 750g salad potatoes
- 1 tsp table salt, per 500ml water
- Dressing
- 4 garlic cloves, peeled
- 2 lemons, juice
- 2 tbsp balsamic vinegar
- 1 tbsp olive oil
- 1 tbsp tahini
- 1 tsp maple syrup
- salt and pepper
- handful basil
- handful parsley
Method
Potatoes. Boil potatoes till soft, 15-20 min from when the water is boiling. Use 1 tsp of table salt per 500ml water.
Dressing. Liquidate the dressing ingredients together. Taste for salt.
Assemble. Drain the potatoes and rinse with cold water to stop the cooking. Mix in the dressing.
