Courgette and Green Pepper Sabzi

Ingredients
- 2 courgettes, slice lengthwise
- 1 green pepper, sliced
- ¼ tsp asafetida
- ½ tsp cumin seeds
- ½ tsp brown mustard seeds
- 1 tbsp ground coriander
- 2 tbsp natural yoghurt
Method
Add courgettes and pepper to tray with sunflower oil and salt. Cremate in the oven on 180°C for 40 min.
In a hot pan, add sunflower oil, asafetida, cumin seeds and brown mustard seeds. When the mustard seeds pop add the courgettes and green peppers and stir.
Turn heat to low and add ground coriander. Fry for 30 secs. Add the yoghurt a spoon at a time, letting it evaporate fully. Taste for salt.
